1. Machine Check
1.1 Ensure the machine is at nominal operating values
1.1.1 Instructions
- Verify that the machine is operating at the appropriate pressure and temperature.
1.2 Clean the handle
1.2.1 Quality Criteria
- Remove the handle from the machine and clean out the used coffee grounds.
- Important: Do not discard coffee grounds in the sink to avoid clogging the drain.
1.3 Load a coffee dose from the grinder
1.3.1 Instructions
- Use the grinder to dispense a dose of coffee with a full movement of the grinder lever.
- The lever is set to dispense the correct amount according to the coffee manufacturer’s recommendations.
- Note: An incomplete movement of the lever may alter the coffee’s taste.
2. Compressing and Preparing the Coffee
2.1 Compress the coffee with a tamper
2.1.1 Instructions
- Use a hand tamper or the built-in tamper on the grinder to evenly compress the coffee.
2.2 Check the filter basket
2.2.1 Quality Criteria
- Ensure the edge of the filter basket is clean before attaching the handle to the machine to prevent damage to the seals.
3. Cleaning the Machine and Surrounding Components
3.1 Clean the drip tray
3.1.1 Instructions
- Remove the drip tray, wash it thoroughly in the sink, and dry it completely.
- Return the drip tray to its position after cleaning and drying the tray bed and the space beneath the machine.
3.2 Report a malfunction
3.2.1 Instructions
- If there is any suspicion of a machine malfunction, immediately contact the shift bartender or shift manager.
